Our Honey

Every jar of Wolfclyde honey comes from a single individual hive. We don’t blend honey from different colonies together. Each hive is harvested, extracted and jarred separately — a slower, more time-consuming way of working, but one that preserves the character of that particular colony, its forage and its place in the landscape.

The result is honey with its own identity — a snapshot of one hive, one place and one harvest. That’s what we mean by single hive Scottish honey.

When the honey is ready, each hive is harvested individually. The frames are uncapped and the honey extracted, cold filtered and jarred, with each harvest kept separate throughout. Nothing is blended between hives — just raw, golden Wolfclyde honey, straight from the colony that produced it.

The flavour of honey is shaped by the landscape around the hive — the flowers in bloom, the weather, the season and where the bees choose to forage. That means no two harvests need taste exactly the same.

We celebrate those differences. We don’t want to produce a generic, uniform honey that tastes the same from one jar to the next. By keeping each hive’s harvest separate, we allow the natural character of that particular colony, place and moment in the season to remain in the jar.

For us, variation isn’t something to remove. It’s something to celebrate.
